Bobby’s stuffed peppers

Ingredients

  • 2 red or yellow peppers
  • 3 green peppers
  • ½ onion
  • 14 ounce smoked sausage rope (pork or beef)
  • Salt
  • Pepper
  • Barbecue sauce of choice

Instructions

Cut the tops off of the green peppers and slice in half lengthwise. Remove pepper’s seeds and membrane. Dice red and yellow pepper. Dice onion. Slice sausage into ½ inch medallions then cut each circle in half

In a large frying pan over medium heat, heat up your olive oil. (You only need a tablespoon or two). Add the chopped peppers and onion to hot pan and mix. Let cook for a few minutes until they start to get soften.Add salt and pepper to the mixture and stir. Add sausage to the pan and let cook for an additional few minutes (You will know when it’s ready as soon as the meat starts to sweat.) Stir in your desired amount of bbq sauce. Remove pan from heat and set aside.

Preheat oven to 360 degrees. Prepare a baking sheet with sheet of parchment paper. Place the green peppers shells on the sheet. Fill each pepper shell to the top with cooked mixture. Place shells in the oven and cook for 30 minutes.
